Volunteer for Kids Day!

University Courtyard will be participating in the Fresno wide community service project Kids day to help raise money for Valley Children’s Hospital.  We will be selling news papers on the Shaw and Cedar corners.  Please sign up to help on the big poster boards in the community style halls and the Atrium.  Any questions email Roehlk@csufresno.edu

     × Brief description of the committee:  The residents who live on campus are represented by a group of elected individuals who provide a variety of programs and services. Any University Courtyard resident can take advantage of what RHA has to offer.  Taking part in RHA is an excellent way to develop leadership skills and become involved in the community.  The main purpose of RHA is to respond to the needs and requests of residents on issues and concerns to make on-campus residential living even better:

- BACCHUS

     × Brief description of the committee: This committee is open to students interested in alcohol education as it relates to University students. It is a great opportunity to develop leadership skills and make a difference. Throughout the year, the Drug and Alcohol committee is present at various University Courtyard events and programs relating to alcohol and drug abuse such as Milk and Cookies and serving “mocktails.”



- University Courtyard Bulldog Energy Sustainability Team (UC BEST)
     × Meeting Day/Time/Location: Every other Wednesday starting February 3rd at 4:00pm in Graves Hall Recreation Room.

Brief description of the committee: UC BEST is a committee geared towards encouraging sustainability throughout campus, particularly within the residence halls, through education, publicity, program planning, and networking with other organizations and individuals that share our vision for developing a more environmentally conscious community.

     × Brief description of the committee: is dedicated to improving and maintaining the general health and well being of all University Courtyard students.  The goal of the Wellness Committee is to promote greater health awareness by providing information, activities and services designed to support healthy lifestyle choices. This committee focuses on programs and activities intended to inform and interest our residents on issues relating to:
          -Physical
          -Psychological
          -Emotional health

     × Brief description of the committee: Have you ever felt like you were different from the norm? Do you want to challenge common prejudices about race, sexual identity, religious views, etc.? Come be a part of the Diversity Committee if you want to immerse yourself in an open-minded environment and make a difference.  University Courtyard’s Diversity Committee is dedicated to:
          -Educating students on the beauty of multiculturalism
          -Encouraging residents to “come out of their shells”
          -Help residents define what diversity is

This is achieved through programs that promote and encourage exploration of cultural backgrounds from a wide variety of viewpoints.

          -Facilitating networking between students and professors throughout the campus that can assist students in their academic endeavors

E.L.: Actually I don’t have any family members in the War.

Baby Brought Along for Robbery Gets Shot

Two men brought a 1-year-old baby with them on a robbery spree. The baby was in the back seat of the car and was shot while fleeing the scene of a robbery.

The two men had robbed several other houses the same day. At the final one there was resistance, and the robbers beat the victim and fled; the victim fired shots at the car as it sped away. A bullet struck the baby through the back seat.

The robbers immediately dumped all the loot and sped to the hospital, where police were awaiting them and
the baby was life-flighted to the children´s hospital in Little Rock and is fighting for its life.

Drunk Driver Breaks Down, Harnesses Horse to Tow His Truck - See Picture here

Poland: 62-year-old Leszek Stepien has been charged with a range of offences, including drink driving and animal cruelty, after a trip he took while he was intoxicated got very complicated.

After Stepien´s truck broke down he had the bright idea of using his horse to tow him. Unfortunately he was in no state to drive, real horsepower or not, and wandered across the centre line and collided with an oncoming vehicle.

Nobody was injured in the accident but Stepien emerged from his tipped-over truck, blaming the horse for the crash. The horse, meanwhile, reportedly had eyes only for a mare that was at the scene and was trying to get to her.

Man Steals Drugs From Police Station, Binge Leaves Him Unable to Sleep for Three Weeks

Queensland: 37-year-old Tony Jackson has been convicted of various offences after he stole almost 30 grams of methamphetamine and 2,000 ecstasy tablets while carrying out trade work on a police station. He was a meth addict of two decades.

A lot of the drugs were sold, but Jackson went on a binge which left him unable to sleep for three weeks. It was this that prompted Jackson to voluntarily enter rehab for six months.

"You must have thought all your Christmases had come at once," observed Justice Debbie Mullins before sentencing him to three years in jail with parole possible from August.

Recipe Ideas
 

Easy Chicken-Mushroom Quesadillas



Ingredients:

     ×   1 tablespoon canola oil
     ×   1 large onion, chopped (about 2 cups)
     ×   8 ounces white button mushrooms, (about 3 cups)
     ×   3 cloves garlic, minced
     ×   2 cups cooked chopped skinless, boneless chicken breast (1 breast half)
     ×   1 teaspoon ground cumin
     ×   1 teaspoon chili powder
     ×   1 teaspoon dried oregano
     ×   2 cups baby spinach leaves, sliced into ribbons
     ×   1/2 teaspoon salt
     ×   1/4 teaspoon fresh ground black pepper
     ×   4 (10-inch) whole-grain flour tortillas
     ×   1 cup shredded Mexican cheese mix or Cheddar
     ×   1/2 cup salsa
     ×   1/4 cup reduced-fat sour cream

Directions:

  1. Heat the oil in a large skillet over a medium heat. Add the onions and mushrooms and cook until the mushroom water is evaporated and they begin to brown, 5 to 7 minutes. Add the garlic and cook for 1 minute more. Add chicken, cumin, chili powder and oregano and stir until all spices are incorporated. Add spinach, salt and pepper and cook until spinach is wilted, about 2 minutes.
  2. Lay 1 tortilla on a flat work surface and sprinkle with 1/4 cup shredded cheese. Spoon 1/2 chicken and vegetable mixture on top of cheese, then top with an additional 1/4 cup cheese. Top with another flour tortilla. Heat a large nonstick skillet with cooking spray over medium heat. Carefully place 1 quesadilla in pan and cook 3 minutes. Using a large spatula, gently flip quesadilla and cook an additional 3 minutes until lightly browned and cheese is melted. Repeat with second quesadilla. Slice each quesadilla into quarters. Place 2 quarters on a plate with 1 tablespoon sour cream and 2 tablespoons salsa.
